SEQUENCE SERVICE (sequence of service in a fine dining restaurant)

1. GREETING
Every time or anywhere you meet the guest….. With 4 components:
  • Said their name (if you remember their name)
  • If first time ( said  welcome to boardwalk )
  • Smile (every time you meet with them)
  • Shaking hand
  • Offering Lunch/Dinner or maybe drink

2. ESCORT THE GUEST TO THE TABLE
U can ask the guest where they want to sit… they may choose at the DINING, GARDEN, or BEACH.
3. PULL THE CHAIR
Make sure pull the chair for the ladies first or kids (need baby chair) or if there any old lady. (Help until all having sat down.
INTRUDUCES YOUR SELF
(My name is …………….I ‘m your waiter)
4. PRESENT THE MENU
  • Offering kids menu if there’s kids
  • always ladies first and continue to the next guest
  • Let them to have a look the menu first and read it and you can tell them if you will be back in few minutes when they ready to have an order
5. GIVE THEM THE MOSQUITO PROTECTION
 (BOARDWALK IS OPEN AREA) so many mosquito
6. SUGGEST THE GUEST TO HAVE STARTING meal with APPATIZER, SOUP
But if they don’t want just let them choose whatever they want
7. TAKING ORDER
Make sure you take drink order first then give the guest time to read the menu
While guest read menu, as fast as you can give your order to the bar. And server the guest.
And continue taking order for food.


8. DRINK SERVED
Make sure you serve all the drinks together and also make sure you use the same glass for the same table.
Make sure the drink is served, before food service.
Ask again if the guest want other drink

9. CHECK THE TABLE
 (Need special cutleries)
Like; steak knife and mice and place
10. FOOD SERVED
  • Make sure you take the right food order before server to the guest.
  • As professional ! Never asking is food belonging? always remember from the first time you take the order
  • Make sure if the garnish facing to the guest
  • Ask them if they need extra sauce
  • Ask one again if the guest want other drink ( what you like other drink for you  )
  • Don’t forget to say “Enjoy your Meals and if there’s anything you need don’t be hesitate to ask one of us”
  • Ask if they want other drink.
  •  Make attention with guest around you..! Make sure the guest is happy /enjoy if they want something ….!

11. SMOKING
If the guests smoking make sure you give them an astray and changes the astray with the clean one every time the use. (A butt cigarette)

12. GUEST SUGGESTION
When the guest finished enjoy their meals don’t forget to ask their comment if they like their food or not.
Ask one again if they want having other drink
13. BILL SETTLEMNET
You have to ask the guest after they ask for their bill such as:
  • Do you want one bill or separate bill( if the guest come with group )
  • Do you want to pay cash or room charge
  • If they pay by room charge make sure their sign, name and room number correctly.


14. WARM FAREWELL or THANK YOU and invited them to come back again.
