Jenis Jenis Sauce dan Penjelasan Lengkap


Sauce adalah cairan yang kental bisa ditambahkan pada daging,ikan dan sayuran,bisa untuk menambahkan rasa,menambah nilai gizi dan memperindah penampilan sebuah makanan. Mother of sauce adalah istilah yang digunakan untuk 3 sauce yang dapat menghasilkan macam-macam sauce baru.

Klasifikasi sauce dapat dibedakan dari :

Temperatur penyajian
– hot sauce (83ºc)                : bechamel sauce,demiglace sauce,velloute
  sauce.
– warm sauce (60ºc)            : hollandaise sauce,bearnaise sauce.
– cold sauce (3-6,5ºc)         : mayonnaise,french dresing,vinaigette
  dressing.
           –frozen sauce (0-(-1,5)ºc)  : parsley butter,maitre d’hotel/cafe de paris.

●warna
White   : velloute sauce
Blonde  : bechamel sauce
Yellow : hollandaise sauce
Red      : tomato sauce
Brown  : demiglace sauce


THREE MOTHER OF SAUCE

1.    Demiglace                  : Mirepoix, tomato paste, tomato concasse, brown stock, red wine, roux.
2.Mayonnaise                  : Salad oil, french mustard, egg yolk ,lime juice, vinegar, S/P, L/P.
3.    Vinaigratte dressing  : Vinegar, lime juice, salad oil, chopped onion, chopped garlic, S/P, L/P.

MACAM-MACAM SAUCE

1.    Tartar sauce                  : Mayonnaise, chopped hard boiled egg, chopped onion, chopped garlic, chopped parsley, gherkin.
2.    Thousand island           : Mayonnaise, chopped hard boiled egg, tomato ketchup, chopped parsley.
3.    Mushroom sauce          : Slice mushroom, chopped onion, shallot,garlic,red wine,butter.
4.    Cocktail sauce               : Mayonnaise,tomato ketchup,brandy,tabasco (S/P, vinegar, red pepper ) cream.
5.    Bechamel sauce          : Milk,roux.
6.    Barbeque sauce/A1     : Chopped onion, chopped green pepper corn, garlic, tomato paste, tomato concasse, red pepper.
7.    Devil sauce                   : Chopped onion, garlic, mayonnaise, red pepper, green pepper, S/P, french mustard.
8.    French pepper sauce  : Black peper corn, green pepper, demiglace, S/P, onion.
9.    Remoulde sauce          : Mayonnaise, chopped gherkin, fillet anchovy, parsley, capers.
10. Black pepper sauce       :Demiglace, black pepper, shallot,cream.
11. Brodelaise sauce           :Demiglace, marrow.
12. Brown sugar sauce      : Brown sugar, red chili, shrimp paste, tamarind, S/P.
13. Chrom sauce                : Bernaise sauce, tomato paste.
14. Mouseline sauce          : Mayonnaise whipped cream.
15. French dressing           : Mayonnaise, Vinaigrette dressing.
16. Goulash sauce             : Demiglace, chopped meat, paprika powder, tomato ketchup.
17. Grand marnier sauce   : Demiglace, red wine, saute shallot, mushroom.
18. Jambalaya sauce         : Tomato sauce, white wine.
19. Blue cheese sauce      : Mayonnaise, blue cheese.
20. Peanut sauce               : Brown sugar, peanut, tamarind, shrimp paste, chili.
21. Red wine sauce           : Demiglace, red wine.
22. Robert sauce                 : Demiglace, english mustard, red wine, pepper corn, chopped shallot, orange juice.
23. Balinese sauce             : Red chili, shallot, garlic, sugar.
24. Milanaise sauce           : Butter, onion, slice mushroom, tomato concasse, S/P.
25. Hollandaise sauce       : Egg yolk, melted butter, white wine, vinegar, crush pepper corn, chopped shallot.
26. Cafe de paris                 : Butter, chopped onion, garlic,chopped parsley, anchovy essence, S/P.
27. Cuury sauce                 : Butter, chopped onion, garlic, flour,turmeric, coconut milk, ginger, S/P.
28. Italian dressing             : Salad oil, vinegar, garlic, lime juice, S/P, L/P.
29. Bernaise sauce            : Hollandaise sauce, chopped taragon, vinegar, shallot, chopped parsley, black pepper, lime juice.
30. Butter sauce                  : Oil, lemon, flour, milk.
31. Chaussen sauce          : Demiglace, tomato concasse, slice mushroom.
32. Tauco sauce                 : Tomato, cheyenne, S/P, chopped garlic.
33. Spicy and sour sauce  : Red chili,brown sugar,vinegar,dried shrimp, salt, garlic, shrimp paste, hot water.



SAUCE UNTUK PASTA

1.    Bolognaise sauce    : Demiglace, shallot, red wine, brown onion, chopped carrot, mince of beef.
2.    Marinara sauce        : Tomato paste, squid, sclop, snapper, thyme, bay leaf, oregano, onion.
3.    Carbonara sauce     : Milk, cube of meat, melted cheese, slice mushroom, top with parmesan cheese.
4.    Al ferde sauce          : Tomato paste, spinach, top with mozarella cheese.
5.    Napoleotine sauce  : Tomato paste, basil leaf.
