Check all dishes are cleared
|
·
You make
sure everything is cleared (including salt & pepper), except table candle
or flower vase.

Prepare service napkin and
B&B plate
|
·
Fold
napkin over about 4 times.
·
Fold in
small rectangular size.
·
Make sure
B&B plate is clean.
·
Hold
B&B plate on left hand.
|
|
3.
|
Sweep away crumbs and food
particles on the table into B&B plate
|
·
Sweep
crumbs by using the open end of folded service napkin.
·
Sweep from
the left of guest.
·
Sweep
thoroughly clean.
·
Make sure
crumbs doesn’t fall down on the guest’s lap
